My mom has a nail salon that has two HD TV on two different location and a newly bought Blu-Ray player. How do you connect one Blu-Ray player to show on two TV simultaneously?

There's a few different ways to go about doing this - but it depends on the quality that you are after.
1. For the best picture - you will need to hook up the TVs to an HDMI Splitter. One cable will come out of the Blu-Ray player, and then the splitter will have an output to each of the TVs. This will give both TVs the absolute best picture - if they have HDMI that is. You can get the splitter and the cables for the best price at http://www.monoprice.com.
2. Another way to do it is to hook up one TV with an HDMI cable, and the other with Component Video cables. The Blu-Ray player will have both outputs. The only downside to this, is that one TV will have Full HD Video, and the other will have 480p (DVD quality picture).
3. Another option is to use a component video splitter, and hook it up the same way as I mentioned in step one. You can get long component video cables, and splitters at the website mentioned above (http://www.monoprice.com).
That's the easiest ways to do it. I have an HDMI splitter so that when we have a bunch of people over to watch the superbowl or whatever, I'll take two TVs out to the garage and split the signal to both from my cable box.

Should I replace my receiver to get hdmi?

I just picked up a sony hdtv and will get a blu ray player to acheive 1080p. My Denon 3803 doesn't have an hdmi jack. Do I need to replace it (like the best buy guy said) for best results or will running hdmi to the tv and using the audio outputs from the tv to the denon work ok? Would there be a time lag?

I would say no. Lag time may be an issue, but can probably be compensated for by the TV or BluRay.
There are 2 main things you will miss out on by not upgrading:
1) Only HDMI will carry TruDolby HD and DTS-Master HD. These are the super high-def, lossless formats that can support uncompressed 7.1. Most material is not and will not be available in True 7.1 uncompressed for a couple years. So your digital inputs on the Receiver are fine for Dolby Digital and DT.
2) Convenience of HDMI switching. i.e. plug all your stuff into your Receiver, then one HDMI to your TV. Saves money on cables and is a cleaner install, if you have a lot of stuff (xBox, DVD, Ipod, Bluray, Wii, etc...).
